Knife Skills 101

A good knife and a steady hand turn cooking from a chore into a calm ritual. You don't need a drawer full of gadgets — just one sharp chef's knife and a few habits.

Hold it properly

  • Pinch the blade between thumb and forefinger where it meets the handle.
  • Wrap your remaining three fingers around the handle for control.
  • A pinch grip feels odd for a day, then becomes second nature.

The claw

  • Curl the fingertips of your guiding hand under, knuckles forward.
  • Rest the flat of the blade against your knuckles as a guide.
  • Move that hand back slowly as you cut — never chase the blade.

Basic cuts

  • Slice: straight cuts of even thickness.
  • Dice: slice into planks, then batons, then cubes.
  • Rock-chop herbs by keeping the tip on the board and rocking the handle.

Keep it sharp

  • A sharp knife is safer — it won't slip.
  • Hone before each use; sharpen every month or two.
  • Never put good knives in the dishwasher.
